CARBONARA

This is the most known Italian pasta dish around the world. Ericuzza suggests that main 4 ingredients needed for this dish are: guanciale, eggs, parmesan and black pepper. Guanciale is an Italian cured meat product prepared from pork cheeks (“guancia” in Italian means cheek).
As guanciale can be very difficult to find unless you live in Italy, Erica offers us to use PANCETTA as an alternative.

Recipe (for 2 personas) :


200g spaghetti
2 eggs
200g pancetta cubes
Parmesan (grated)
Black pepper

1. Bring salted water to boil in a saucepan

2. Meanwhile cook the pancetta cubes in a pan until golden without adding ANYTHING! (Pancetta is naturally salted and it will be releasing its own fat as it cooks so it won’t burn).

3. Cook the pasta and meanwhile beat the eggs in a big bowl together with the parmesan and the pepper until is all well mixed.

4. Once the pasta is cooked, drain it from the water and add it to the bowl with the eggs, then add the pancetta and mix everything together.

5. Serve with an additional sprinkle of black pepper and parmesan. Buon appetito!
