PROSECCO COOKIES WITH CHOCOLATE CHIPS AND CASHEW NUTS

Ingredients:

400g flour 00
200g granulated sugar
16g baking powder
150ml Prosecco
150ml sunflower oil
130g dark chocolate chips
200g cashew nuts (or pine nuts)
Pinch of salt

1. Mix the flour, the sugar, the salt and the baking powder into a bowl. 2. Mix the oil and the Prosecco into a jug, pour it into the bowl and mix until you get a dough. 3. Add the chocolate chips and the nuts to the dough and mix until they are evenly distributed. 4. Form 2/3cm bowls with the dough and display them on a baking tray covered with baking paper. Cook at 180 degrees for 15mins until the cookies are golden (cook for longer if needed).

Flour 00.
The names 00 and 0 Flour refer to specifically Italian milled flour that is used for pasta making. It is also called Doppio Zero >> meaning double zero. Farro explains : the grading system is 2, 1, 0 or 00 and indicates to how finely ground the flour is and how much of the bran and germ have been removed.  2, for instance, is a wholemeal flour while 00 is the most refined of the three and has the lowest level of bran. It is similar to unbleached all-purpose/plain flour, which is a mix of hard and soft wheat, and though while finer, it creates a dough that is silkier and maintains a chewiness when the pasta is cooked.

16g baking powder
150ml Prosecco
100ml coconut oil
130g dark chocolate chips
100g cashew nuts
